Description

This issue is the UI test version of #8 that looks to add functional tests to Scribe's development. This issue includes an initial exploration of tools that could be used and mapping out the steps to be done in order to achieve proper UI test coverage.

Current State:

• CI already runs unit tests via ci_test.yaml using xcodebuild test on iPhone 16 / iOS 18.5 simulator, with a 5% coverage threshold check.
• No UI tests exist yet (XCUITest target not set up).

Solution:

1. Add XCUITest Target in Xcode:

• Add a new ScribeUITests target to Scribe.xcodeproj
• Place test files under Scribe/ScribeUITests/

2. Initial UI Tests to Write:Cover the core user flows:

• App launch and main screen renders correctly
• Navigate to Settings screen
• Navigate to Download Data screen
• Language selection interaction
• Keyboard activation instructions flow

3. CI Workflow
   Either extend ci_test.yaml or add a new ci_uitest.yaml with:

4. Coverage
   Update the existing Python coverage threshold script to include UI test coverage.

The existing ci_test.yaml already has the simulator/build cache setup, the cleanest approach is to add the UI test scheme to the same workflow rather than a separate file.
