Replace IBM FHIR Server in /metadata CapabilityStatement

we have at least 3 IBM references left in the CapabilityStatement resources that we server in LinuxForHealth FHIR Server 5.0.0: https://github.com/LinuxForHealth/FHIR/blob/main/fhir-server/src/main/java/org/linuxforhealth/fhir/server/resources/Capabilities.java#L116-L118

lets get those fixed up for 5.1.0
